Christmas Dinner

My parents are going out of town this holiday season to visit my stepfather's family in the much-warmer south. As a result, I will be cooking Christmas Dinner. In an effort to put a delicious and easy meal together, I visited foodnetwork.com for inspiration. I've run across TOO many choices. However they do have some Christmas menus. Right now I'm leaning towards the Festive Christmas Brunch. What are some of your favorite Christmas/holiday foods?
